Because we have small production, we pay attention to each bread with maximum care to maintain the quality. We also handmake flavoring ingredients, such as Anko, Almond Cream, Candied Orange Peels to achieve the flavour we pursue.
Bread can easily tastes great if you add flavorings such as chocolate or cheese. But we believe the taste of bread dough itself decides the truly tasty bread or not. We therefore put our most efforts on achieving ideal gluten develpment, optimal fermentation, and balanced flavors in order to make truly tasty dough. We make simple bread so that you can tell the difference from its flavor of carefully chosen high quality ingredients, and its texture we pursued from our tireless experiments.
We carefully choose high quality ingredients such as Japanese flour, French AOP butter, organic sugar, Hokkaido red beans, etc., as they are the key components that you find our bread different and truly tasty. We are also aware most of retail bread contains preservatives and artificial enhancers. These are an easy trick to make the bread soft and last longer. From the very beginning, we set our way not to use any artificial additives because we think they can potentially harm your body, thus we've tirelessly developed our products so that we achieve great quality doughs without using any help of these artificial enhancers. We are handmaking most of our flavoring ingredients too because of this reason as well.

Our Anko Shokupan provides a unique twist on a classic Japanese flavor. Anko is a sweet paste made from flavorful red beans, a staple ingredient in many traditional Japanese sweets. At Tsumiki, we make our Anko from scratch using high-quality Hokkaido red beans, carefully adjusting the taste to perfectly complement our fluffy Shokupan.
