It was there that my love for bread began. As a high school student, I became fascinated with the array of unique and high-quality breads that emerged as a new trend, alongside the traditional mom-and-pop bakeries that had always been around. Every Friday, my friends and I would venture out to discover the best breads in town, debating which bakery had the most delicious offerings. But it wasn't until I took a part-time job at a bakery that I really began to understand the nuances of good bread. The bakery I worked at had a brand license from a luxurious Parisian boulangerie and made authentic French bread, which I could take home after my shifts. It was through this experience that I developed my palate and learned to identify the taste of truly great bread.
When I moved to Singapore, I discovered that the bread scene was different from what I was used to in Japan. While there are certainly some good quality bakeries in Singapore, few were able to match the flavor and quality I was accustomed to.
As the pandemic hit and we all spent more time at home, I started baking bread with my husband. I quickly became obsessed with perfecting the art of bread-making and recreating the delicious bread I remembered from Japan. I spent countless hours experimenting with different recipes and techniques until I finally created bread that satisfied my taste.
Inspired by my passion for bread and my desire to share it with others, I decided to open my own bakery, Tsumiki. At Tsumiki, we prioritize high-quality ingredients and the handmade touch, using only the best flour, French AOP fermented butter, and organic sugar without any additives, artificial flavors, or colors. Our goal is to provide our customers with the best possible bread experience, and we take great care in every step of the baking process to ensure that our bread is always fresh, flavorful, and healthy. We use traditional baking techniques, such as long fermentation times, to bring out the best possible flavors in each loaf.
